WE PRESENT ARCHIMEDES AND ARTEMISE

A fundamental part of our bread making is the integration of our mother yeasts, Archimedes and Artemis, which contribute significantly to the fragrance, flavor, structure and digestibility of the leavened product. Archimedes will be part of your pizza with Verace dough, while Artemis is present in the pizzas with Sicilian Ancient Grains dough.

THE HISTORIC FRIED

Dough produced with organic type 0 flour and about 60% hydration. Baking is done in the Neapolitan tradition, giving our fried pizza a golden color, respecting the parameters of softness and meltiness.

All our doughs have a maturation technique that is managed at controlled temperatures after a natural leavening process. Whatever product you choose we guarantee high digestibility and nutrients.

OUR DOUGHS

THE GENUINE

Dough made with organic type 0 and type 1 flour. The result of combining the two flours, combined with a hydration between 70% and 80% make for a thin but well-structured, soft and melt-in-your-mouth pizza with a medium-pronounced crust.

SICILIAN ANCIENT GRAINS

Dough made with organic flours of type 1 and type 2. In addition to these, Sicilian Ancient Grains of Perciasacchi, Margherito and Biancolilla varieties are included. The percentage of these Sicilian durum wheats, combined with a hydration between 60 and 70 percent, give our dough crispness and fragrance. The result will be a pizza with a medium pronounced, crumbly and crispy crust with a strong flavor.
